Lacto-Fermenting: What and How

You may know (or not…that’s another post!), that I love Kombucha…so this was a natural progression for me.  I have made fermented veggies in the past, but it was a hit-and-miss endeavor.  Sometimes they turned out, most often they didn’t.  When Matt from Fermentools contacted me…and I investigated his site and product…I was terribly excited! FINALLY…tools that I could use, that were simple and easy and would have me fermenting like a crazy woman in no time!

Before we get to my first recipe at the bottom of the post…let’s look briefly at what fermentation is, why you should ferment your own food and how it’s good for you!


What is Fermentation?

Fermentation is one of the oldest food preservation techniques known to man. The process of fermenting foods is efficient and inexpensive, and it requires little by way of scientific knowledge or special equipment . Fermentation is the only food preservation technique that makes food healthier instead of damaging, which is double duty and double good in my book. The fermentation process is a natural chemical process in which yeast or bacteria convert carbohydrates into lactic acid or alcohol in an anaerobic or near-anaerobic environment (really geeky language there, huh??!!)  When done properly, fermenting food encourages the growth of healthy microorganisms, while seeking to prevent the growth of microorganisms that cause food to spoil or go bad. In addition to preserving food, fermenting breaks some of the substances food is made of down into simple components the body is able to recognize and quickly process into energy and nutrients. Fermented food is full of living organisms that are beneficial to the human body. This stands in stark contrast to most of the foods consumed today, which are largely devoid of healthy organisms, such as fast food, food with perservatives, and the list can go on and on.

From the outside looking in, fermented foods can be a bit intimidating. Fermenting is a foreign concept to most people and it appears to go against the basic precepts of food safety. We’re taught from a young age not to leave food out or it’ll spoil, and leaving food out is exactly what you’re told to do in order to ferment it. While it’s true the fermenting process requires you to leave food at room temperature  in order to ferment it, fermenting doesn’t cause food to go bad. Instead, it does the exact opposite and actually improves the nutritional value of the food by adding healthy probiotic bacteria that rebalance your gut and are thought to improve your overall health.

Why It’s Better to Ferment Your Own Food

Spend enough time around people who ferment food and you’ll undoubtedly hear someone say fermentation is more of an art form than it is a science . The lacto-fermentation process doesn’t lend itself well to large -batch fermentation because it’s tough to produce consistent results. Even when fermentation methods are standardized, the end product won’t consistently be exactly the same every time— which is what consumers expect from off-the-shelf, mass produced products. For this reason, most manufacturers use brining methods that mimic fermentation in flavor and texture, but don’t feature the same healthy bacteria you get when lactobacillus is used. These manufacturers use techniques that slow or completely eliminate the formation of healthy bacteria in the name of more consistent results.

Fermented Foods Are Alive

If you’ve never fermented anything before, you’re in for a special treat. Fermented foods are living and breathing foods teeming with life. They’re nothing like the sterile, boring foods you’re used to. Fermented foods bubble, froth and create gases as part of the fermentation process and people are often surprised by just how dynamically alive (and pungent) fermented foods can be.  Fermented vegetables go through a transformation process known as lactofermentation. Natural lactobacteria that exist on the vegetables begin to feed on the sugars and starch in the food and they convert it to lactic acid, gases and small amounts of a bunch of other compounds.

Let’s get to my first recipe…I think you will LOVE it!  But be warned, it is strong, I wouldn’t let these little beauties sit and ferment to long!

Green Tomatoes & Garlic

I decided to use garlic and green tomatoes for my first fermenting project.  I am a southern gal and we just love our green tomatoes.  And for some reason, they were plentiful here in southern California this year.  So, after I made a batch or two of Fried Green Tomatoes I had leftovers and thought…what shall I do with these beauties…ferment them!!


Garlic Cloves

Green Tomatoes

Red Chili Peppers

Himilayan Sea Salt



Fermentool Fermenting System


*Prior to assembling your ferment, wash and sanitize your jars.

1.  Seperate your head of garlic into cloves and peel.

2.  Gather your green tomatoes

3.  Dice tomatoes into rough chunks

4.  Layer garlic cloves and tomatoes

5.  Add red chili peppers to taste

*To make your brine use distilled or filtered water, boil it, and add 3 TBSP of Himalayan Salt per Qt. of water.  Allow to dissolve, pour over vegetables leaving 1 inch of head space.  Install the glass weight on top of your veggies to keep it under the brine.*

*Allow your ferement to buble away for about 1 week, but I would check it after 3 days.  Everyone’s taste is different. The longer you allow it to ferment the stronger it will get.  When it is to your liking, remove the ferment system, cap with a regular lid and refrigerate.  Your fermented veggies should keep for about 6 months.

I used the ferementing system from Fermentools.  They have a complete system that only requires you to have good water (aka distilled or filtered) and your wide mouth canning jars.  And we all have those…right?!!  Also the beauty of using Fermentools system is that it is ideal for small batches.  Which is just perfect for my hubby and me.  We don’t eat much so a Qt. at a time is juuuust right!  Fermentools kits come with everything you will need:

Healthy Plants don’t get disease. The same goes for the Human Body.  Healthy soil feeds the plants. Avoiding Colds and Flu Naturally

cold-flu-bannerThis year it is of utmost importance that we pay attention to strengthening our immune systems naturally. Using certain herbs, foods, supplements and homeopathic remedies can help you avoid catching a cold or flu and build your immune system. If you do catch a virus, they can help relieve the symptoms and shorten the duration and severity of the illness.

What most people don’t realize is how much your daily diet has an impact on the strength of your immune system. If you or your child are eating sweets daily, processed foods, junk food, drinking soda or other sweetened beverages regularly, you are weakening your immunity and will be more likely to catch virus’s. One teaspoon of sugar (soda has about 9-11 tbsp.) can weaken your immune system for 4 hours. I believe that this is why so many people are now having an extreme difficulty fighting illnesses. (Besides repeated antibiotic use)

Good Nutrition

Try eating more vegetables, at least 4-5 servings a day! Along with eggs for breakfast, how about a few pieces of steamed asparagus, some spinach, squash or a few tomato slices. It is very important to take a good quality, plant-based not synthetic, multi-vitamin/ mineral supplement daily which supplies you with vitamins, minerals, trace minerals, amino acids, essential fatty acids, proanthocyanadines, bioflavanoids, green foods, enzymes and more.
Taking 2000-4000 mg. of Vitamin C every day will help you fight infections. Eating garlic regularly or taking odorless garlic capsules helps fight viral, bacterial, and yeast infections. Bee propolis is known as Russian penicillin and is often found in natural vitamin supplements. It is collected by bees to protect the hives from infection.

Oil of Oregano

My favorite is a high-quality, full-strength Oil of Oregano. It is a very powerful agent and when used will assist the body in its fight against bacterial, viral,parasitic, and fungal infections. I recommend keeping some on hand! It’s an excellent general tonic and immune stimulant. You can take one or two capsules a day, or place one or two drops of the oil under the tongue to go immediately into the blood and lymph system. 4-5 drops can also be placed in juice and taken several times a day. This very well could be your best offense when it comes to the flu!

Therapeutic value of Colloidal Silver

Also consider using Colloidal Silver for excellent anti-viral protection! It works great in helping to reduce the symptoms of colds and flu. Emergency Preparedness for Kids

emergency-prep-kidsPreparation and early planning are very essential factors for any endeavor to be successful. Instilling values of preparation and responsibility on your children at a tender age will pay off with great returns. Similar to the way you are always looking at what the future holds and how best to make it better, your children also need to know the value of preparedness.

As you may have noticed, children enjoy learning about things hands on, rather than sitting through a boring lecture. With this in mind, you could consider focusing on giving your children practical responsibilities. However, do not overburden them; give them simple tasks that are fun and enjoyable. For instance you could put them in charge of the kitchen garden. As they put little seeds in the garden and water them everyday, they will soon learn that without their help, the plants will not survive.  In caring for the plants, a sense of responsibility is instilled in your children. They can begin to see the difference they can make in contributing toward the family.

Apart from the above, you could also get them a pet or put up a chicken coop. This is for more dependable children and will require more attention and care. Furthermore, it will require them to prepare for future calamities such as predators. You can teach them how to prepare for emergencies that may occur, such as a fox in the chicken coop.


Remember that children copy and mirror most of your behaviors and actions. Therefore, if you are a family of preppers; your children will also follow suit learning from your traits. To point them in the right direction, you could have discussion at the dinner table on how the rise in price of certain products will affect the family.

As simple as it sounds, this will go a long way in encouraging your kids to be preppers. Since most kids want to be like “mommy and daddy”, they will try to adapt a similar line of thinking. From you, they can learn that being prepared can ease anxiety and make life meaningful. The hobbies that your children develop also play a big role in shaping their future traits. There are particular hobbies that require a lot of responsibility and preparation, such as building model planes or playing sports. When you child engages in these types of hobbies, they will begin to learn how important it is to prepare for the future. All you have to do is to get your kids the required equipment and leave them to their own devices. Hobbies such as gardening and knitting are among the hobbies that promote prepping. Try finding out what your childrens’ interest are first then encourage and support them. Preppers, prepping, survival and responsibility should be words that your children hear everyday. As a parent, you are aware that you are responsible for the survival of your child in the latter days. The values that you instill in them are the ones that will carry them on through life.

Summer Bugs Are Coming to a Garden Near YOU!

garden-pests-collageLuckily, most garden pests thrive during the harsh winter months, but that doesn’t meant there aren’t any in your summer garden!  Many thrive in hot weather like we’ve been having recently.  Wet weather followed by warm weather can be especially encouraging for many pests including slugs, snails, aphids, red spider mites and vine weevils.

Slugs and Snails!

Slugs and snails may be your biggest garden pest this summer. It’s time to protect any vulnerable growth by enforcing your slug and snail protection. They aren’t easy to get rid of so you’ll need multiple ways to combat these garden pests. Slugs and snails will infest pots, eat their way into potatoes and feast upon your prize juicy strawberries leaving a myriad of holes.

Snails leave a silvery slime trail wherever they go so they are easy to spot. They eat the soft green bits between the leaf ribs leaving a skeleton leaf behind. Slugs, similarly, eat the leaves but don’t leave anything behind!

Initially, add a layer of grit over your soil, this surface will be avoided by slugs and snails. If you see them in your garden remove them by hand and relocate them to hedgerows. Draw the slugs away from your plants with beer, put some in a jar buried into the ground as a trap for slugs. Coffee grounds scattered over your soil will also put off slugs and snails and won’t stand out against your garden.


Aphids or ‘green fly’ are small insects that feed on all foliage and flowers and are particularly partial to ornamental plants, fruit, vegetables and houseplants. There are over 500 species of Aphids and they range in size from 1-7mm (1/16 – 1/4in) long.

Aphids create a sticky surface on plants which encourages a growth of unattractive sooty mould, aphids will also eventually distort plants. They can be carried for hundreds of miles by wind or air currents and can transfer viruses to other plants notably Strawberries, Raspberries, Tomatoes, Dahlias and Sweet peas.

Get rid of aphids as soon as possible. Walk around the garden and use a cloth to wipe off any aphids or a spray of water, paying particular attention to the underside of leaves. Don’t over fertilise, this will produce an abundance of greenery which aphids love, use slow release fertilisers instead.

Red Spider Mites!
The red spider mite is a common sap-feeding pest which causes mottled leaves on greenhouse plants, houseplants as well as garden plants. Common victims are: vines, peach, nectarines, cucumbers, tomatoes,zuchinni, peppers, poinsettias, orchids and Impatiens.

Destroy any plants that are infected by red spider mites but don’t put them on the compost heap because the infection will keep on spreading. Moving plants out of the late afternoon sun will stop red spider mites from taking up a permanent place on your plants.

Vine Weevils!
It is one of the most common and devastating of all the garden pests, vine weevils are vicious pests that can cause suddenly otherwise healthy-looking plants collapse and die. Vine weevils are dangerous because they attack using two methods – the adults eat the leaves and the grubs eat the roots. Each adult can lay hundreds of eggs and thrive during the summer months.

Vine weevils will eat anything from ornamental plants to fruits, especially those grown in containers. The adults feed mainly at night on the foliage of many herbaceous plants and shrubs. Watch out especially for your Camellias Rhododendron, Hydrangea, Bergenia and fuchsias.

Good hygiene can help reduce the amount of vine weevils in your garden, clean out any debris from your green houses. Put physical barriers in place because vine weevils walk rather than fly. Protect individual pots and the legs of greenhouse staging with sticky tape smeared with non drying glue or fruit grease.

Here are some natural ways to use essential oils to keep your garden pest free….

Try mixing 8 ounces of water in a spray bottle with ½ teaspoon natural soap and 12 drops of dōTERRA essential oil. Remember to shake the bottle frequently to keep the oil mixed with the water.
